THE CRAZIEST WEDDED WONDERLAND REQUESTS FROM THE ICE EVENT


Wedded Wonderland never do things in half measures and the latest event, ICE, was no exception. We collaborated with the talented team at InterContinental Sydney Double Bay who promised they were happy to cater to almost any request – much like they do for all of their brides and grooms.

Of course, we put them to the test and asked for some pretty crazy things and InterContinental Sydney Double Bay never let us down.

We want a personalised menu and each dish to have an element of ICE

From smoking dry ice, to snow-like foam, the InterContinental Sydney Double Bay created a magical menu fit for an ICE Queen.

The hotel’s passionate and creative Executive Chef Julien Pouteau was delighted at this challenge and he relishes opportunities to demonstrate creativity and create something unique.

Julien said: “I really enjoyed tailoring the menu for this event with an ice theme.”

“I designed a menu highlighting fresh seafood and seasonal produce, with two entrees: pan-seared scallop with leek, salmon row and buttermilk; and salmon sashimi with cucumber jelly, pickle salad and avocado, served on dry ice to create a wonderful icy, almost smoky effect. The colours of these dishes were very clean, simple and minimal to tie into the concept of the event.”

“The main course was a true highlight – we served 160 dishes featuring crispy skin Glacier 51 toothfish, sourced from the Antarctic and served on a glass plate – you can’t get more icier that that! The fish was served with persimmon, fermented chilli and saffron rice cracker for crunch.”

We want to create a feast for Sydney’s most popular celebrities and journalists; how are you going to do it?

InterContinental Sydney Double Bay exceeded this brief, creating 320 dishes in total using 36 kilos of toothfish, 700 scallops and 15 boxes of persimmons. Almost every single staff member at the hotel was involved to some extent in seeing this event executed.

We want champagne…Lots of it!

Throughout the evening, the InterContinental Sydney Double Bay went through a total of 300 champagne flutes, 640 plates and more than 1000 pieces of cutlery!

We have more than 100 kilos of carved ice and thousands of individual flowers that need to be delivered and bumped in.

The ICE event took two full days to bump in and set up in the Grand Ballroom of the InterContinental Sydney Double Bay. There were a number of different vendors supplying and contributing to the event, including florist, production company, AV, alcohol partner and glassware, all working together to bring the event to life.
